SARDINIA - Linguine sarde and artichokes
Viaggio linguine 11oz
Spring onion 5oz
Viaggio artichokes 24oz
Viaggio extra virgin olive oil 3.5oz
Parsley to taste
½ cup white wine
Pine nuts 1.5oz
To prepare the linguine with artichokes and anchovies begin draining Viaggio artichokes. In the meantime, slice the spring onion finely. In a pan pour Viaggio extra virgin olive oil and heat on medium heat together with garlic and remove it when gold. Add the onion and sauté it for a couple of minutes. Then pour a ladle of water and let it stew for 10-12 minutes. Add now the Viaggio artichokes to the pan and cook for about 10 minutes, pouring white wine and letting it evaporate.
Meanwhile, cut the fillets of anchovies into pieces of approximately 2 cm. Pour the pine nuts in a pan and toast them for 4-5 minutes, stirring occasionally. At this point cook Viaggio linguine in a pot with boiling water, salted to taste. Once your artichokes are cooked, chop the parsley finely, add it into the pan and add the anchovies, cooking for about 5 minutes. Drain the pasta al dente and add it to pan. Add the pine nuts, mix everything together and serve.
