LAZIO - Carciofi alla romana

Herb-Marinated Viaggio Artichokes

Servings: 4 (as an appetizer or side)

Ingredients

  • 8 Viaggio artichoke hearts, drained
  • 2 garlic cloves
  • Fresh parsley, to taste
  • Fresh mint (5–6 leaves or to taste)
  • Viaggio extra virgin olive oil, to taste
  • Salt and pepper, to taste

Instructions

  1. Finely chop the garlic, parsley, mint, and the artichoke stems. Place in a bowl and season with olive oil, salt, and pepper. Mix well.
  2. Arrange the drained artichoke hearts on a serving plate. Spoon the herb mixture over each one.
  3. Drizzle with a little extra olive oil if desired and serve at room temperature.


Perfect as an antipasto or a light side dish!
