Herb-Marinated Viaggio Artichokes
Servings: 4 (as an appetizer or side)
Ingredients
- 8 Viaggio artichoke hearts, drained
- 2 garlic cloves
- Fresh parsley, to taste
- Fresh mint (5–6 leaves or to taste)
- Viaggio extra virgin olive oil, to taste
- Salt and pepper, to taste
Instructions
- Finely chop the garlic, parsley, mint, and the artichoke stems. Place in a bowl and season with olive oil, salt, and pepper. Mix well.
- Arrange the drained artichoke hearts on a serving plate. Spoon the herb mixture over each one.
- Drizzle with a little extra olive oil if desired and serve at room temperature.
Perfect as an antipasto or a light side dish!
