CAMPANIA - Napoletana artichokes

Warm Artichoke & Olive Salad

Ingredients

  • 8 Viaggio artichokes, cut into wedges
  • 3½ oz olives (your choice of variety)
  • 1 tbsp capers, rinsed
  • Freshly ground black pepper, to taste

Instructions

  1. Place the artichoke wedges in a mixing bowl. Add the olives, capers, and a generous grind of black pepper. Toss gently to mix.
  2. Heat a skillet over medium heat. Add the artichoke mixture and cook for 5–10 minutes, stirring occasionally, until everything is warmed through and well combined.
  3. Remove from heat and let rest for a few minutes. Serve warm as a side dish or appetizer.
