Sautéed Artichokes with Pecorino & Breadcrumbs

Ingredients
- 4 Viaggio artichokes, trimmed and cut into wedges
- 2 cloves garlic
- 3 tablespoons Viaggio extra virgin olive oil
- 1 tablespoon breadcrumbs
- 2 tablespoons grated pecorino cheese
- Lemon juice, to taste
- Salt and pepper, to taste
- Oregano, to taste
Instructions
- After trimming and slicing the artichokes into wedges, drizzle them with a little lemon juice to prevent browning. Drain well before cooking.
- In a large skillet, heat the Viaggio extra virgin olive oil over medium heat. Add the garlic cloves and sauté until golden, then remove them.
- Add the drained artichokes to the skillet. Cover and cook over moderate heat for about 5 minutes, stirring occasionally until tender.
- Sprinkle the artichokes with breadcrumbs, grated pecorino, oregano, salt, and pepper. Stir well to combine and cook for another minute until everything is evenly coated.
- Serve hot as a flavorful side dish or antipasto.
