CALABRIA - Calabrese artichokes

Sautéed Artichokes with Pecorino & Breadcrumbs

Ingredients

  • 4 Viaggio artichokes, trimmed and cut into wedges
  • 2 cloves garlic
  • 3 tablespoons Viaggio extra virgin olive oil
  • 1 tablespoon breadcrumbs
  • 2 tablespoons grated pecorino cheese
  • Lemon juice, to taste
  • Salt and pepper, to taste
  • Oregano, to taste

Instructions

  1. After trimming and slicing the artichokes into wedges, drizzle them with a little lemon juice to prevent browning. Drain well before cooking.
  2. In a large skillet, heat the Viaggio extra virgin olive oil over medium heat. Add the garlic cloves and sauté until golden, then remove them.
  3. Add the drained artichokes to the skillet. Cover and cook over moderate heat for about 5 minutes, stirring occasionally until tender.
  4. Sprinkle the artichokes with breadcrumbs, grated pecorino, oregano, salt, and pepper. Stir well to combine and cook for another minute until everything is evenly coated.
  5. Serve hot as a flavorful side dish or antipasto.
