BASILICATA - Ciaudedda lucana

Ingredients

  • 12½ oz fresh broad beans, double peeled
  • 4 small potatoes, peeled and diced
  • 4 Viaggio artichokes, trimmed and cut into wedges
  • 1 large onion, thinly sliced
  • 3½ oz bacon, chopped
  • Viaggio Extra Virgin Olive Oil, to taste
  • Salt, to taste
  • Lukewarm water, as needed

Instructions

  1. Double peel the broad beans and rinse under cold water. Clean and cut the artichokes into wedges. Peel and dice the potatoes. Peel and thinly slice the onion.
  2. In a large pan, heat Viaggio Extra Virgin Olive Oil over high heat. Add the onion and bacon, and sauté until the onion is soft and slightly golden.
  3. Add the broad beans, artichokes, and potatoes to the pan. Stir well, then add 2 ladles of lukewarm water. Reduce heat to low, cover, and let simmer for about 30 minutes, stirring occasionally. Add a bit more water during cooking if needed.
  4. Once the vegetables are soft and cooked through, remove from heat and let rest for a few minutes before serving.
  5. Taste and adjust salt if necessary.


Serving Suggestion:

Serve warm as a rustic side dish or light main, with crusty bread or over creamy polenta.
