Ingredients
- 12½ oz fresh broad beans, double peeled
- 4 small potatoes, peeled and diced
- 4 Viaggio artichokes, trimmed and cut into wedges
- 1 large onion, thinly sliced
- 3½ oz bacon, chopped
- Viaggio Extra Virgin Olive Oil, to taste
- Salt, to taste
- Lukewarm water, as needed
Instructions
- Double peel the broad beans and rinse under cold water. Clean and cut the artichokes into wedges. Peel and dice the potatoes. Peel and thinly slice the onion.
- In a large pan, heat Viaggio Extra Virgin Olive Oil over high heat. Add the onion and bacon, and sauté until the onion is soft and slightly golden.
- Add the broad beans, artichokes, and potatoes to the pan. Stir well, then add 2 ladles of lukewarm water. Reduce heat to low, cover, and let simmer for about 30 minutes, stirring occasionally. Add a bit more water during cooking if needed.
- Once the vegetables are soft and cooked through, remove from heat and let rest for a few minutes before serving.
- Taste and adjust salt if necessary.
Serving Suggestion:
Serve warm as a rustic side dish or light main, with crusty bread or over creamy polenta.
