ABRUZZO - Abruzzese artichokes

Ingredients

  •  3 Viaggio marinated artichokes (with oil, vinegar, salt, garlic, parsley & chili)
  •  1 lemon, juiced
  •  1 onion, finely chopped
  •   1 anchovy fillet, finely chopped
  •  1 tablespoon Viaggio Extra Virgin Olive Oil
  •  Water (as needed)

Instructions

  1. In a bowl, mix half of the chopped onion with the anchovy and lemon juice. Stir well to combine.
  2. In a pan, heat the olive oil over medium heat. Add the remaining chopped onion and the marinated artichokes. Sauté for 1 minute.
  3. Add the prepared sauce and a ladle of water to the pan. Cover with a lid and simmer for about 5 minutes, until the artichokes are tender and the flavors have melded.
  4. Uncover and drizzle in another spoonful of the sauce just before serving.
