TRENTINO SOUTH TYROL - Panada

Panada (Tuscan Bread Soup)

Ingredients

  • 14 oz stale bread, sliced
  • Water, as needed
  • Viaggio extra-virgin olive oil, to taste
  • Salt and pepper, to taste
  • Viaggio grated Parmesan, to taste

Instructions

  1. Place the sliced bread in a soup pot and add enough water to cover it.
  2. Cook over low heat, stirring occasionally to keep the bread soft and break it down into a porridge-like consistency. This should take about 2–3 hours.
  3. Once the bread has cooked down, season the panada with salt and pepper.
  4. Drizzle with Viaggio extra-virgin olive oil and stir in grated Parmesan to taste.
  5. Serve warm, enjoying the creamy, rustic texture.
