INGREDIENTS
12oz Viaggio flour
3oz Viaggio grated parmesan
1 ½ oz Swiss cheese
1 ½ oz Provolone cheese
1 ½ Viaggio grated Romano
1 tablespoon sugar
0.7oz Brewer’s yeast
4 tablespoons Viaggio Extra Virgin Olive Oil
Salt and pepper to taste
DIRECTIONS
Dissolve the yeast and the sugar in ½ cup of lukewarm water, then mix 3 ½ cup of Viaggio flour, making a smooth dough. Make it rise for 1 hour, covered with a towel, in a warm place. Take 1 ¾ oz of Parmesan cheese, grate ½ oz of Swiss cheese and ½ oz of provolone cheese and dice the rest of the cheeses. Mix the remaining Viaggio flour with 2 tablespoons of Viaggio Extra Virgin Olive Oil, a pinch of salt and pepper and ¾ cup of lukewarm water. Incorporate to the mixture the risen dough, the beaten eggs with grated and diced cheeses. Knead with your hands. Grease a oven tray, transfer the dough and let it rise again for 2 hours, covered with a towel. Cook the focaccia in the oven already hot at 375F for 40 minutes. Bake and serve.
