MARCHES - Focaccia marchigiana

Cheese Focaccia

Preheat: 375°F

Ingredients

  • 12 oz Molino Signetti flour
  • 3 oz Viaggio grated Parmesan
  • 1 ½ oz Swiss cheese, diced
  • 1 ½ oz Provolone cheese, diced
  • 1 ½ oz Viaggio grated Romano
  • 1 tablespoon sugar
  • 0.7 oz Brewer’s yeast
  • 4 tablespoons Viaggio extra virgin olive oil, divided
  • Salt and pepper, to taste
  • ¾ cup lukewarm water (for dough)
  • ½ cup lukewarm water (for yeast mixture)
  • 2 beaten eggs

Instructions

  1. In a small bowl, dissolve the yeast and sugar in ½ cup lukewarm water. Let it sit for 10 minutes, or until the mixture becomes frothy.
  2. In a large bowl, mix 3 ½ cups of flour with the yeast mixture. Add 2 tablespoons of olive oil, a pinch of salt, and pepper. Stir until a smooth dough forms. Cover the bowl with a towel and let the dough rise in a warm place for 1 hour.
  3. While the dough is rising, grate 1 ¾ oz of Parmesan cheese. Dice the Swiss and Provolone cheeses.
  4. After the dough has risen, add the beaten eggs, grated and diced cheeses, and ¾ cup lukewarm water. Mix well, then knead the dough by hand until it’s smooth and well combined.
  5. Grease a baking tray with 2 tablespoons of olive oil. Transfer the dough onto the tray, flattening it to cover the entire surface. Cover with a towel and let it rise for another 2 hours.
  6. Preheat the oven to 375°F (190°C). Once the dough has risen, bake it for 40 minutes or until golden brown and fully cooked through.
  7. Remove from the oven and allow the focaccia to cool slightly before slicing and serving.
