Ingredients
- 12 oz Molino Signetti flour
- 3 oz Viaggio grated Parmesan
- 1 ½ oz Swiss cheese, diced
- 1 ½ oz Provolone cheese, diced
- 1 ½ oz Viaggio grated Romano
- 1 tablespoon sugar
- 0.7 oz Brewer’s yeast
- 4 tablespoons Viaggio extra virgin olive oil, divided
- Salt and pepper, to taste
- ¾ cup lukewarm water (for dough)
- ½ cup lukewarm water (for yeast mixture)
- 2 beaten eggs
Instructions
- In a small bowl, dissolve the yeast and sugar in ½ cup lukewarm water. Let it sit for 10 minutes, or until the mixture becomes frothy.
- In a large bowl, mix 3 ½ cups of flour with the yeast mixture. Add 2 tablespoons of olive oil, a pinch of salt, and pepper. Stir until a smooth dough forms. Cover the bowl with a towel and let the dough rise in a warm place for 1 hour.
- While the dough is rising, grate 1 ¾ oz of Parmesan cheese. Dice the Swiss and Provolone cheeses.
- After the dough has risen, add the beaten eggs, grated and diced cheeses, and ¾ cup lukewarm water. Mix well, then knead the dough by hand until it’s smooth and well combined.
- Grease a baking tray with 2 tablespoons of olive oil. Transfer the dough onto the tray, flattening it to cover the entire surface. Cover with a towel and let it rise for another 2 hours.
- Preheat the oven to 375°F (190°C). Once the dough has risen, bake it for 40 minutes or until golden brown and fully cooked through.
- Remove from the oven and allow the focaccia to cool slightly before slicing and serving.
