LAZIO - Frittata cipolle e guanciale

Bacon & Onion Frittata

Total Time: 15 minutes

Servings: 3–4

Ingredients

  • 6 eggs
  • 2 medium onions, thinly sliced
  • 1 oz diced bacon
  • Viaggio extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a medium-sized skillet, heat 2–3 tablespoons of Viaggio extra virgin olive oil over medium heat. Add the diced bacon and cook for a few minutes until it starts to crisp. Add the sliced onions and cook until they turn golden brown and soft.
  2. In a bowl, beat the eggs and season with salt and pepper to taste.
  3. Pour the beaten eggs into the skillet over the cooked bacon and onions. Cook over medium-low heat until the bottom is set, then flip carefully to brown the other side. (Alternatively, finish under a broiler for an easier flip-free method.)
  4. Once fully cooked and golden on both sides, remove from the pan, slice, and serve warm.
