LAZIO - Frittata cipolle e guanciale

Ingredients
- 6 eggs
- 2 medium onions, thinly sliced
- 1 oz diced bacon
- Viaggio extra virgin olive oil
- Salt and pepper, to taste
Instructions
- In a medium-sized skillet, heat 2–3 tablespoons of Viaggio extra virgin olive oil over medium heat. Add the diced bacon and cook for a few minutes until it starts to crisp. Add the sliced onions and cook until they turn golden brown and soft.
- In a bowl, beat the eggs and season with salt and pepper to taste.
- Pour the beaten eggs into the skillet over the cooked bacon and onions. Cook over medium-low heat until the bottom is set, then flip carefully to brown the other side. (Alternatively, finish under a broiler for an easier flip-free method.)
- Once fully cooked and golden on both sides, remove from the pan, slice, and serve warm.
