INGREDIENTS
0.88lb potatoes
0.88lb Viaggio Grated Parmesan
1 onion
salt and pepper to taste
Viaggio Extra Virgin Olive Oil
DIRECTIONS
First cut the onion into thin slices, peel the potatoes then grate them using a grater with large holes. In a pot with a little Viaggio Extra Virgin Olive Oil, pour the potatoes and the onion and cook for 10 minutes. Then add the Viaggio Viaggio Grated Parmesan, and season all with salt and pepper. Cook for about 20 minutes on medium-low heat, stirring with a wooden spoon to melt the Viaggio Grated Parmesan. When you have obtained a homogeneous cream with potatoes and Viaggio Grated Parmesan let it rest for a few minutes. In the meantime, pour a little Viaggio Extra Virgin Olive Oil in a pan and put it on medium heat. Then pour in the mixture of potatoes and cheese distributing it well on the pan. Cover for a while with a lid and when a top crust is created, turn the Frico on the other side. Finally turn the stove off, transfer the Frico on a plate and serve.
