Frico with Parmesan Cheese and Potatoes

Ingredients
- 0.88 lb Potatoes, peeled and grated
- 0.88 lb Viaggio Grated Parmesan Cheese
- 1 Onion, thinly sliced
- Salt, to taste
- Black Pepper, to taste
- Viaggio Extra Virgin Olive Oil, for cooking
Instructions
- Peel and grate the potatoes using a large-holed grater. Slice the onion thinly.
- In a large pot, heat a small amount of Viaggio Extra Virgin Olive Oil. Add the grated potatoes and sliced onion. Cook over medium heat for about 10 minutes, stirring occasionally.
- Once the potatoes and onions have softened, add the grated Parmesan Cheese. Stir to combine and season with salt and black pepper. Cook for about 20 minutes on medium-low heat, stirring often, until the mixture becomes creamy and homogeneous.
- In a separate pan, heat a little Viaggio Extra Virgin Olive Oil over medium heat. Once hot, pour in the potato and cheese mixture, spreading it evenly in the pan. Cover with a lid and cook until a golden crust forms on the bottom, about 10 minutes.
- Once the top is golden and crispy, carefully flip the Frico to cook the other side for another 5-10 minutes until browned and crispy.
- Once both sides are crispy, transfer the Frico to a plate and serve hot.
