FRIULI VENEZIA GIULIA - Frico friulano

Frico with Parmesan Cheese and Potatoes

Ingredients

  • 0.88 lb Potatoes, peeled and grated
  • 0.88 lb Viaggio Grated Parmesan Cheese
  • 1 Onion, thinly sliced
  • Salt, to taste
  • Black Pepper, to taste
  • Viaggio Extra Virgin Olive Oil, for cooking

Instructions

  1. Peel and grate the potatoes using a large-holed grater. Slice the onion thinly.
  2. In a large pot, heat a small amount of Viaggio Extra Virgin Olive Oil. Add the grated potatoes and sliced onion. Cook over medium heat for about 10 minutes, stirring occasionally.
  3. Once the potatoes and onions have softened, add the grated Parmesan Cheese. Stir to combine and season with salt and black pepper. Cook for about 20 minutes on medium-low heat, stirring often, until the mixture becomes creamy and homogeneous.
  4. In a separate pan, heat a little Viaggio Extra Virgin Olive Oil over medium heat. Once hot, pour in the potato and cheese mixture, spreading it evenly in the pan. Cover with a lid and cook until a golden crust forms on the bottom, about 10 minutes.
  5. Once the top is golden and crispy, carefully flip the Frico to cook the other side for another 5-10 minutes until browned and crispy.
  6. Once both sides are crispy, transfer the Frico to a plate and serve hot.
