CAMPANIA - Mussels au gratin

Baked Stuffed Mussels

Ingredients
- 3 lb fresh mussels
- 2 garlic cloves, finely chopped
- 2 tbsp fresh parsley, chopped
- 9 oz breadcrumbs
- 1 oz capers, finely chopped
- 4 tbsp Viaggio Extra Virgin Olive Oil
- Salt and black pepper, to taste
Instructions
- Scrub and rinse the mussels thoroughly under cold water. Place them in a large pot over medium heat and cook until they open. Discard any that remain closed. Drain and reserve the cooking liquid, then strain it to remove any grit.
- In a mixing bowl, combine the breadcrumbs, garlic, parsley, capers, and Viaggio olive oil. Season with salt and pepper. Moisten the mixture with a few tablespoons of the reserved mussel cooking liquid until it’s soft but not soggy. Add more breadcrumbs if needed.
- Spoon a small amount of the breadcrumb mixture onto each open mussel half. Arrange them on a baking sheet or in a shallow baking dish, drizzle with a little more olive oil, and bake in a preheated oven at 375°F for about 5 minutes, or until lightly golden on top.
- Serve warm as an appetizer or seafood side dish.
