INGREDIENTS
3 lb mussels
2 cloves of garlic
2 tablespoons chopped parsley
9oz of breadcrumbs
1oz capers
4 tablespoons of Viaggio Extra Virgin Olive Oil
Salt to taste
Black pepper to taste
DIRECTIONS
Wash the mussels very well under running water, collect them in a saucepan and, on medium heat, let them open, then drain them, then filter the cooking water and keep it aside. In a bowl put the breadcrumbs, the Viaggio Extra Virgin Olive Oil, the garlic, the capers and the parsley finely chopped, add salt and pepper. Soften the whole with the liquid filtered and mix with care. Add more breadcrumbs if the mixture is not too soft. Cover with a bit of the mixture the mussels; align the mussels in a dish with oil and make them gratinate in a hot oven at 375° for about 5 minutes.
