UMBRIA - Rigatoni alla norcina

Rigatoni with Sausage and Truffle Cream Sauce

Ingredients

  • 12 oz Viaggio rigatoni (ridged)
  • 1 cup cream
  • Black pepper, to taste
  • Fresh black truffle, for garnish
  • Salt, to taste
  • 10 oz sausage, peeled and chopped
  • Viaggio extra-virgin olive oil, to taste
  • Nutmeg, to taste
  • Viaggio grated parmesan, for serving

Instructions

  1. In a pan, heat a drizzle of Viaggio extra-virgin olive oil over medium heat. Add the chopped sausage and cook, breaking it apart, until browned and fully cooked.
  2. Stir in the cream, a pinch of nutmeg, and black pepper. Simmer for a few minutes, allowing the sauce to thicken slightly.
  3. Meanwhile, cook the Viaggio rigatoni in a large pot of boiling salted water according to the package instructions.
  4. Drain the pasta and toss it into the pan with the sausage and cream sauce. Stir until well-coated.
  5. Serve the pasta topped with freshly shaved black truffle and a sprinkle of Viaggio grated parmesan.
