Rigatoni with Sausage and Truffle Cream Sauce

Ingredients
- 12 oz Viaggio rigatoni (ridged)
- 1 cup cream
- Black pepper, to taste
- Fresh black truffle, for garnish
- Salt, to taste
- 10 oz sausage, peeled and chopped
- Viaggio extra-virgin olive oil, to taste
- Nutmeg, to taste
- Viaggio grated parmesan, for serving
Instructions
- In a pan, heat a drizzle of Viaggio extra-virgin olive oil over medium heat. Add the chopped sausage and cook, breaking it apart, until browned and fully cooked.
- Stir in the cream, a pinch of nutmeg, and black pepper. Simmer for a few minutes, allowing the sauce to thicken slightly.
- Meanwhile, cook the Viaggio rigatoni in a large pot of boiling salted water according to the package instructions.
- Drain the pasta and toss it into the pan with the sausage and cream sauce. Stir until well-coated.
- Serve the pasta topped with freshly shaved black truffle and a sprinkle of Viaggio grated parmesan.
