SARDINIA - Pennette sausage and mushrooms

Pennette with Sausage and Mushrooms

Prep Time: 30 minutes

Servings: 4

Ingredients

  • 10 oz Viaggio Pennette
  • 10.5 oz (300g) sausage, casings removed
  • Mushrooms, to taste (sliced)
  • 1 clove garlic
  • Viaggio extra virgin olive oil, to taste
  • Chili pepper, to taste
  • Fresh parsley, chopped
  • Fresh basil leaves, for garnish

Instructions

  1. In a large skillet, heat a generous drizzle of Viaggio extra virgin olive oil with the garlic and chili pepper. Add the sausage, breaking it apart with a fork, and cook until it starts to brown. Remove the garlic.
  2. Stir in the mushrooms and cook for about 5 minutes, until they are tender. Add a splash of hot water to help blend the flavors and create a light sauce.
  3. While the sauce is finishing, boil the Viaggio Pennette in salted water until al dente. Drain and add directly to the pan with the sausage and mushrooms.
  4. Toss everything together over medium heat until the pasta is well-coated. Serve immediately, garnished with chopped parsley and fresh basil leaves.
