SARDINIA - Pennette sausage and mushrooms

Pennette with Sausage and Mushrooms

Ingredients
- 10 oz Viaggio Pennette
- 10.5 oz (300g) sausage, casings removed
- Mushrooms, to taste (sliced)
- 1 clove garlic
- Viaggio extra virgin olive oil, to taste
- Chili pepper, to taste
- Fresh parsley, chopped
- Fresh basil leaves, for garnish
Instructions
- In a large skillet, heat a generous drizzle of Viaggio extra virgin olive oil with the garlic and chili pepper. Add the sausage, breaking it apart with a fork, and cook until it starts to brown. Remove the garlic.
- Stir in the mushrooms and cook for about 5 minutes, until they are tender. Add a splash of hot water to help blend the flavors and create a light sauce.
- While the sauce is finishing, boil the Viaggio Pennette in salted water until al dente. Drain and add directly to the pan with the sausage and mushrooms.
- Toss everything together over medium heat until the pasta is well-coated. Serve immediately, garnished with chopped parsley and fresh basil leaves.
