APULIA - Ziti alla Sangiovanniello

Spicy Ziti with Anchovy Tomato Sauce

Prep & Cook Time: 30 minutes

Servings: 4

Ingredients

  • 1 lb Viaggio Cut Ziti
  • 14 oz Viaggio Italian Peeled Tomatoes
  • Viaggio Extra Virgin Olive Oil, to taste
  • 2 anchovy fillets
  • 1 garlic clove
  • 1 red chili pepper
  • Capers, to taste
  • Fresh parsley, to taste
  • Salt, to taste

Instructions

  1. In a large skillet, heat 2 tablespoons of Viaggio Extra Virgin Olive Oil over medium heat. Add the garlic and cook until fragrant.
  2. Add the anchovies and stir until they dissolve into the oil.
  3. Stir in the Viaggio Italian Peeled Tomatoes and the red chili pepper. Simmer the sauce for about 20 minutes, stirring occasionally.
  4. Just before removing from heat, add capers and chopped parsley. Adjust salt to taste.
  5. Meanwhile, cook the Viaggio Cut Ziti in salted boiling water according to package directions. Drain well.
  6. Toss the ziti with the sauce and serve immediately.
