APULIA - Ziti alla Sangiovanniello

Spicy Ziti with Anchovy Tomato Sauce

Ingredients
- 1 lb Viaggio Cut Ziti
- 14 oz Viaggio Italian Peeled Tomatoes
- Viaggio Extra Virgin Olive Oil, to taste
- 2 anchovy fillets
- 1 garlic clove
- 1 red chili pepper
- Capers, to taste
- Fresh parsley, to taste
- Salt, to taste
Instructions
- In a large skillet, heat 2 tablespoons of Viaggio Extra Virgin Olive Oil over medium heat. Add the garlic and cook until fragrant.
- Add the anchovies and stir until they dissolve into the oil.
- Stir in the Viaggio Italian Peeled Tomatoes and the red chili pepper. Simmer the sauce for about 20 minutes, stirring occasionally.
- Just before removing from heat, add capers and chopped parsley. Adjust salt to taste.
- Meanwhile, cook the Viaggio Cut Ziti in salted boiling water according to package directions. Drain well.
- Toss the ziti with the sauce and serve immediately.
