PIEDMONT - Fettuccine alla piemontese

Fettuccine with Meat Sauce and White Truffle

Prep & Cook Time: 30 minutes

Servings: 4

Ingredients

  • 14 oz Viaggio Fettuccine
  • 3 cups meat sauce (your preferred recipe)
  • 3 oz butter
  • 3.5 oz Viaggio grated Parmesan
  • 1 white truffle
  • Nutmeg, to taste
  • Black pepper, to taste
  • Salt, for pasta water

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook the Viaggio fettuccine until al dente. Drain and transfer to a large serving dish.
  2. Immediately toss the hot fettuccine with butter, half of the grated Parmesan, a pinch of nutmeg, and freshly ground black pepper. Mix gently until the butter melts and coats the pasta evenly.
  3. Thinly slice the white truffle over the pasta, reserving a few slices for garnish if desired.
  4. Serve the fettuccine warm, accompanied by the remaining Parmesan and meat sauce on the side for guests to add to taste.
