Capellini with Chickpeas

Ingredients
- 0.8 lb Viaggio Capellini
- 14 oz boiled chickpeas
- 2 oz lard
- 2 oz butter, divided
- 5 tablespoons Viaggio grated Romano cheese
- 1 clove garlic, minced
- 1 onion, finely chopped
- 1 tablespoon fresh parsley, chopped
- Vegetable broth (as needed)
- Salt and pepper, to taste
Instructions
- In a large pan, melt 1 tablespoon of butter and the lard over medium heat. Add the minced garlic and chopped onion. Cook until the onion is golden and softened. Add the chickpeas and chopped parsley, and cook for about 10 minutes on low heat. If the mixture gets too dry, add a bit of hot vegetable broth. Season with salt and pepper to taste.
- Meanwhile, cook the Viaggio Capellini in salted water according to package directions. Drain the pasta and set aside.
- Add the drained pasta to the pan with the chickpea mixture. Toss to combine, and add the remaining tablespoon of butter. Sauté everything together for a couple of minutes, letting the flavors meld.
- Remove from heat, sprinkle with Viaggio grated Romano, stir to combine, and serve immediately.
