LOMBARDY - Pasta with beans

Ingredients
- ½ onion, finely chopped
- 1 celery stalk, chopped
- 1 carrot, chopped
- 0.88 lb Viaggio ditalini pasta
- 0.66 lb borlotti beans (cooked or canned, drained)
- Fresh parsley, chopped (to taste)
- Vegetable broth (as needed)
Instructions
- In a large pot, heat a drizzle of olive oil and sauté the chopped onion, celery, and carrot over medium heat until softened.
- Add the borlotti beans and stir well. Begin adding vegetable broth gradually, enough to cover the beans.
- Bring the mixture to a simmer, then stir in the Viaggio ditalini. Cook together, adding more broth as needed to maintain a soupy consistency, until the pasta is al dente.
- Taste and adjust seasoning if desired. Serve hot, topped with freshly chopped parsley.
