LOMBARDY - Pasta with beans

Pasta e Fagioli (Ditalini with Borlotti Beans)

Ingredients

  • ½ onion, finely chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 0.88 lb Viaggio ditalini pasta
  • 0.66 lb borlotti beans (cooked or canned, drained)
  • Fresh parsley, chopped (to taste)
  • Vegetable broth (as needed)

Instructions

  1. In a large pot, heat a drizzle of olive oil and sauté the chopped onion, celery, and carrot over medium heat until softened.
  2. Add the borlotti beans and stir well. Begin adding vegetable broth gradually, enough to cover the beans.
  3. Bring the mixture to a simmer, then stir in the Viaggio ditalini. Cook together, adding more broth as needed to maintain a soupy consistency, until the pasta is al dente.
  4. Taste and adjust seasoning if desired. Serve hot, topped with freshly chopped parsley.
