CAMPANIA - Spaghetti "aglio e olio" - Neapolitan style

Creamy Garlic & Chili Spaghetti

Ingredients
- 1 lb Viaggio spaghetti
- ½ cup Viaggio extra virgin olive oil
- 3 garlic cloves, thinly sliced
- 1 fresh hot chili pepper
- 1 bunch fresh parsley, chopped
- Viaggio grated Romano cheese, to taste
- Salt, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until just shy of al dente.
- In a large pan, heat the Viaggio olive oil over medium heat. Add the whole chili pepper and let it infuse until small bubbles form around it.
- Once the oil is hot and fragrant, remove the pan from heat. Add the sliced garlic and chopped parsley, allowing them to infuse the oil without burning.
- One minute before the pasta is done, remove the chili from the pan and transfer the drained spaghetti directly into the garlic oil mixture. Toss well over medium-low heat, adding a few spoonfuls of the starchy pasta water to create a silky, creamy sauce.
- Stir in grated Romano cheese to taste and toss again until fully coated. Plate and finish with an extra sprinkle of cheese and a dash of parsley, if desired.
