ABRUZZO - Fettuccine Abruzzi

Ingredients
- 1 onion, finely chopped
- 3 oz bacon, chopped
- Salt and black pepper, to taste
- Fresh parsley and basil, finely chopped (to taste)
- 2 oz Viaggio Grated Pecorino Cheese
- 3 tablespoons Viaggio Extra Virgin Olive Oil
- 1 lb Viaggio Fettuccine
- Water or broth (as needed)
Directions
- In a small saucepan, heat the olive oil over medium heat. Add the chopped onion and bacon. Sauté until the onion is soft and the bacon is lightly crisped.
- Stir in the chopped parsley and basil. Season with salt and pepper.
- Add a splash of water or broth occasionally to keep the mixture moist and develop the sauce.
- Meanwhile, bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions. Drain well.
- Place the cooked fettuccine in a large serving bowl. Sprinkle with Viaggio Pecorino Cheese. Pour the sauce over the pasta, toss to coat evenly, and serve immediately.
