ABRUZZO - Fettuccine Abruzzi

Fettuccine Abruzzi

Ingredients

  • 1 onion, finely chopped
  • 3 oz bacon, chopped
  • Salt and black pepper, to taste
  • Fresh parsley and basil, finely chopped (to taste)
  • 2 oz Viaggio Grated Pecorino Cheese
  • 3 tablespoons Viaggio Extra Virgin Olive Oil
  • 1 lb Viaggio Fettuccine
  • Water or broth (as needed)

Directions

  1. In a small saucepan, heat the olive oil over medium heat. Add the chopped onion and bacon. Sauté until the onion is soft and the bacon is lightly crisped.
  2. Stir in the chopped parsley and basil. Season with salt and pepper.
  3. Add a splash of water or broth occasionally to keep the mixture moist and develop the sauce.
  4. Meanwhile, bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions. Drain well.
  5. Place the cooked fettuccine in a large serving bowl. Sprinkle with Viaggio Pecorino Cheese. Pour the sauce over the pasta, toss to coat evenly, and serve immediately.
