UMBRIA - Bianca Sauce

Ingredients

  • 4 table spoons Extra Virgin Olive Oil Viaggio Brand
  • 1/2 clove garlic, crushed, finely chopped
  • ½ celery stalk finely chopped
  • ½ yellow onion finely chopped’
  • 3 cups of heavy whipping cream
  • 2 cups Viaggio grated Parmesan Cheese.
  • 1 spoon of salt or to taste
  • ¼ chopped fresh parsley and a pinch of black pepper (for garnish)


Instructions

1.  Sauté with Extra Virgin Olive Oil the onion/garlic/celery and salt in a saucepan or skillet over medium low heat.

2.  When onion starts to be golden whisk in the heavy cream and simmer gently for 2 minutes to cook out some of the water from the cream.

3.  Add cheese a handful at a time, whisking after each addition until the cheese is melted.

4.  Simmer gently for 1 or 2 minutes more until the sauce is thickened. If it is too thick add some heavy cream. Add salt to taste.

5.  If you're cooking pasta: When your pasta is cooked al dente, drain it well (do not rinse it) and toss it in the skillet with the hot Bianca’s sauce. Garnish with parsley and black pepper.

6.  Serve immediately.
