CAMPANIA - Caprese Salad with Balsamic Reduction

Ingredients

  • 4 ripe tomatoes, sliced (heirloom or Roma work well)
  • 8 oz (225g) fresh mozzarella, sliced
  • Fresh basil leaves (a handful)
  • 2–3 tbsp extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Balsamic reduction (recipe below or store-bought)

For Homemade Balsamic Reduction

  • ½ cup balsamic vinegar
  • 1–2 tsp honey or brown sugar (optional, for added sweetness)

Instructions for reduction:

  1. Add balsamic vinegar (and honey/sugar if using) to a small saucepan.
  2. Simmer over medium-low heat, stirring occasionally, until it reduces by half and coats the back of a spoon (about 10–15 minutes).
  3. Cool before drizzling—it will thicken as it cools.

Assembly

  1. On a large serving plate, alternate slices of tomato and mozzarella in a row or circular pattern.
  2. Tuck fresh basil leaves between slices or sprinkle on top.
  3. Drizzle with olive oil and the balsamic reduction.
  4. Season with salt and freshly cracked black pepper.
