CAMPANIA - Caprese Salad with Balsamic Reduction

Ingredients
- 4 ripe tomatoes, sliced (heirloom or Roma work well)
- 8 oz (225g) fresh mozzarella, sliced
- Fresh basil leaves (a handful)
- 2–3 tbsp extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- Balsamic reduction (recipe below or store-bought)
For Homemade Balsamic Reduction
- ½ cup balsamic vinegar
- 1–2 tsp honey or brown sugar (optional, for added sweetness)
Instructions for reduction:
- Add balsamic vinegar (and honey/sugar if using) to a small saucepan.
- Simmer over medium-low heat, stirring occasionally, until it reduces by half and coats the back of a spoon (about 10–15 minutes).
- Cool before drizzling—it will thicken as it cools.
Assembly
- On a large serving plate, alternate slices of tomato and mozzarella in a row or circular pattern.
- Tuck fresh basil leaves between slices or sprinkle on top.
- Drizzle with olive oil and the balsamic reduction.
- Season with salt and freshly cracked black pepper.
