Ingredients:
For the Cookies:
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 stick (½ cup) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- Zest of 2 lemons
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons Viaggio lemon juice
- 1 teaspoon lemon zest (optional, for extra flavor)
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy (about 3-4 minutes).
- Beat in the eggs, one at a time. Then, add the lemon zest, lemon juice, and vanilla extract, and continue mixing until smooth.
- Gradually add the dry ingredients (flour mixture) into the wet ingredients, mixing until just combined. The dough will be slightly sticky.
- Use a spoon or your hands to shape small portions of dough into balls (about 1 to 1 ½ inches in diameter) and place them on the prepared baking sheet. Leave about 1 inch between each cookie, as they will spread slightly during baking.
- Bake for 12-14 minutes, or until the edges of the cookies are lightly golden and the tops are set.
- While the cookies are baking, mix together the powdered sugar, lemon juice, and lemon zest (optional) in a small bowl to make the glaze. It should have a smooth, pourable consistency.
- Once the cookies have cooled slightly (about 5 minutes), drizzle the glaze over the top of each cookie. Allow the glaze to set for about 10-15 minutes.
