CALABRIA - Lemon Cookies

Preheat: 350°F

Ingredients:

For the Cookies:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 stick (½ cup) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons Viaggio lemon juice
  • 1 teaspoon lemon zest (optional, for extra flavor)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy (about 3-4 minutes).
  4. Beat in the eggs, one at a time. Then, add the lemon zest, lemon juice, and vanilla extract, and continue mixing until smooth.
  5. Gradually add the dry ingredients (flour mixture) into the wet ingredients, mixing until just combined. The dough will be slightly sticky.
  6. Use a spoon or your hands to shape small portions of dough into balls (about 1 to 1 ½ inches in diameter) and place them on the prepared baking sheet. Leave about 1 inch between each cookie, as they will spread slightly during baking.
  7. Bake for 12-14 minutes, or until the edges of the cookies are lightly golden and the tops are set.
  8. While the cookies are baking, mix together the powdered sugar, lemon juice, and lemon zest (optional) in a small bowl to make the glaze. It should have a smooth, pourable consistency.
  9. Once the cookies have cooled slightly (about 5 minutes), drizzle the glaze over the top of each cookie. Allow the glaze to set for about 10-15 minutes.
  10. Let the cookies cool completely on a wire rack before serving. Enjoy your delicious Italian lemon cookies with a cup of tea or coffee!
