PIEDMONT - Lemon Gelato

Ingredients:

  • 1 ½ cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • Zest of 2 lemons
  • ½ cup Viaggio Lemon Juice
  • 1 tablespoon cornstarch (optional, for extra creaminess)
  • Pinch of salt

Directions

  1. In a saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally until the sugar is dissolved, and the mixture is warm (but not boiling). Remove from heat.
  2. In a small bowl, whisk together the lemon zest, lemon juice, and cornstarch (if using). If you're using cornstarch, dissolve it in a small amount of the warm milk mixture to avoid clumping.
  3. Gradually add the lemon mixture into the warm milk and cream mixture, stirring constantly to combine. If you used cornstarch, continue stirring the mixture over low heat for a few minutes to help it thicken slightly. Once combined, remove from heat.
  4. Let the mixture cool to room temperature, then cover and refrigerate for at least 2-3 hours, or until chilled.
  5. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions (typically 20-30 minutes, depending on your machine).
  6. Once the gelato has thickened to a soft-serve consistency, transfer it to an airtight container and freeze for at least 4 hours or overnight to firm up.
  7. Scoop and serve your refreshing lemon gelato! Enjoy it on its own or as a topping for other desserts.
