Ingredients:
- 1 ½ cups whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- Zest of 2 lemons
- ½ cup Viaggio Lemon Juice
- 1 tablespoon cornstarch (optional, for extra creaminess)
- Pinch of salt
Directions
- In a saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally until the sugar is dissolved, and the mixture is warm (but not boiling). Remove from heat.
- In a small bowl, whisk together the lemon zest, lemon juice, and cornstarch (if using). If you're using cornstarch, dissolve it in a small amount of the warm milk mixture to avoid clumping.
- Gradually add the lemon mixture into the warm milk and cream mixture, stirring constantly to combine. If you used cornstarch, continue stirring the mixture over low heat for a few minutes to help it thicken slightly. Once combined, remove from heat.
- Let the mixture cool to room temperature, then cover and refrigerate for at least 2-3 hours, or until chilled.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions (typically 20-30 minutes, depending on your machine).
- Once the gelato has thickened to a soft-serve consistency, transfer it to an airtight container and freeze for at least 4 hours or overnight to firm up.
- Scoop and serve your refreshing lemon gelato! Enjoy it on its own or as a topping for other desserts.
