SICILY - EGGPLANT BITES

Ingredients:
- 1 large eggplant
- 1 cup Santangelo Sunflower Oil 80/20
- 2 garlic cloves, minced
- Fresh parsley, chopped (for garnish)
- Salt, to taste
Instructions:
- Wash and dry the eggplant, then cut it into small cubes.
- Heat the sunflower oil in a pan over medium heat. Once hot, add the eggplant cubes. Fry, stirring occasionally, until golden and crispy.
- Transfer the fried eggplant to a paper towel-lined plate to absorb excess oil.
- Place the eggplant on a serving plate. Sprinkle with minced garlic, chopped parsley, and salt. Gently toss to combine.
Serve warm or chilled—both are delicious!
