SICILY - EGGPLANT BITES

Crispy Eggplant Bites

Prep & Cook Time: 10 minutes

Servings: 2

Ingredients:

  • 1 large eggplant
  • 1 cup Santangelo Sunflower Oil 80/20
  • 2 garlic cloves, minced
  • Fresh parsley, chopped (for garnish)
  • Salt, to taste

Instructions:

  1. Wash and dry the eggplant, then cut it into small cubes.
  2. Heat the sunflower oil in a pan over medium heat. Once hot, add the eggplant cubes. Fry, stirring occasionally, until golden and crispy.
  3. Transfer the fried eggplant to a paper towel-lined plate to absorb excess oil.
  4. Place the eggplant on a serving plate. Sprinkle with minced garlic, chopped parsley, and salt. Gently toss to combine.


Serve warm or chilled—both are delicious!
