SICILY - EGGPLANT BITES

Ingredients:
- 1 Large Eggplant
- 1 cup - Santangelo Sunflower Oil 80/20
- 2 cloves of garlic
- Parsley to garnish
- Salt as need it
Directions:
Wash and dry the eggplant. Chop the eggplant in little cubes. Pour the Sunflower Oil on a pan on medium hit. When the Sunflower Oil is hot put the chopped eggplant in the pan. Stir occasionally until golden and crispy. Put them for a few seconds into a paper towel to absorb the excessive oil. Now you can place them into your favorite serving plate adding some garlic, parsley and salt. Mix gently and …enjoy!
You can serve it warm or cold!
