UMBRIA - Sausages Ragu’ with Viaggio Bowties

Ingredients:
- 1 (28 oz) can Viaggio Crushed Tomatoes
- 1 lb bag Viaggio Bowtie Pasta
- ½ cup Mantuano Unfiltered Extra Virgin Olive Oil
- 3 sausages of your choice, casings removed
- 4 garlic cloves, minced
- ½ cup diced onion
- ½ cup Viaggio Parmesan Cheese
- ½ cup chopped parsley
- Pinch of salt
Instructions:
- Bring a large pot of salted water to a boil. Cook the bowtie pasta according to the package instructions. Drain and set aside.
- While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the garlic and sausages, breaking up the sausage with a wooden spoon as it cooks.
- After 5 minutes, stir in the diced onion and a pinch of salt. Cook until the onion is soft and golden, about 5 more minutes. Then pour in the crushed tomatoes and simmer for 8–10 minutes, stirring occasionally.
- Add the drained pasta to the sauce. Toss in the Parmesan cheese and parsley. Mix well and serve hot.
