UMBRIA - Sausages Ragu’ with Viaggio Bowties

Quick Sausage & Bowtie Pasta

Prep + Cook Time: 20 minutes

Servings: 4

Ingredients:

  • 1 (28 oz) can Viaggio Crushed Tomatoes
  • 1 lb bag Viaggio Bowtie Pasta
  • ½ cup Mantuano Unfiltered Extra Virgin Olive Oil
  • 3 sausages of your choice, casings removed
  • 4 garlic cloves, minced
  • ½ cup diced onion
  • ½ cup Viaggio Parmesan Cheese
  • ½ cup chopped parsley
  • Pinch of salt

Instructions:

  1. Bring a large pot of salted water to a boil. Cook the bowtie pasta according to the package instructions. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the garlic and sausages, breaking up the sausage with a wooden spoon as it cooks.
  3. After 5 minutes, stir in the diced onion and a pinch of salt. Cook until the onion is soft and golden, about 5 more minutes. Then pour in the crushed tomatoes and simmer for 8–10 minutes, stirring occasionally.
  4. Add the drained pasta to the sauce. Toss in the Parmesan cheese and parsley. Mix well and serve hot.
