TUSCANY - Boscaiola Mushroom Sauce

Rigatoni with Mushroom & Tomato Sauce

Ingredients:
- 1 lb Viaggio Rigatoni
- 1 (28 oz) can Viaggio Whole Peeled Tomatoes
- ½ cup Viaggio Extra Virgin Olive Oil
- ½ cup diced onions
- ½ lb mushrooms, sliced
- Salt, to taste
- Fresh parsley, chopped
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the onions and cook until golden. Add the mushrooms and a splash of water, then stir in the whole peeled tomatoes (breaking them up slightly), salt, and parsley. Let simmer, stirring occasionally.
- Meanwhile, bring a pot of salted water to a boil. Cook the Viaggio Rigatoni until al dente according to package instructions. Drain.
- Add the cooked rigatoni to the pan with the sauce. Toss everything together and sauté for 1–2 minutes.
- Plate and enjoy hot, garnished with extra parsley if desired.
