TUSCANY - Boscaiola Mushroom Sauce

Rigatoni with Mushroom & Tomato Sauce

Total Time: 20 minutes

Servings: 4

Ingredients:

  • 1 lb Viaggio Rigatoni
  • 1 (28 oz) can Viaggio Whole Peeled Tomatoes
  • ½ cup Viaggio Extra Virgin Olive Oil
  • ½ cup diced onions
  • ½ lb mushrooms, sliced
  • Salt, to taste
  • Fresh parsley, chopped

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the onions and cook until golden. Add the mushrooms and a splash of water, then stir in the whole peeled tomatoes (breaking them up slightly), salt, and parsley. Let simmer, stirring occasionally.
  2. Meanwhile, bring a pot of salted water to a boil. Cook the Viaggio Rigatoni until al dente according to package instructions. Drain.
  3. Add the cooked rigatoni to the pan with the sauce. Toss everything together and sauté for 1–2 minutes.
  4. Plate and enjoy hot, garnished with extra parsley if desired.
