SICILY - Pesto alla Siciliana

INGREDIENTS
- 17oz Viaggio Italian peeled tomatoes
- 2oz Pine nuts
- 3/4 cup Viaggio Extra Virgin Olive oil
- 1 clove of garlic - peeled and cut in half
- 1 bunch of Basil
- 3.5oz Viaggio grated parmesan
- 5oz Ricotta cheese
- Salt and pepper to taste
DIRECTIONS
- Wash the basil leaves under running water, drain them, dry them with a cloth
- Pour the Viaggio Italian peeled tomatoes in a blender, add the washed and dried basil leaves and pine nuts
- Add into the blender: the clove of garlic, Viaggio grated parmesan and ricotta. Salt and pepper to taste
- After all ingredients are added, pour in the Viaggio Extra Virgin Olive Oil and run the mixer at low speed to control the creaminess.
