SICILY - Pesto alla Siciliana

Ingredients

  • 17 oz Viaggio Italian peeled tomatoes
  • 2 oz pine nuts
  • ¾ cup Viaggio extra virgin olive oil
  • 1 clove garlic
  • A bunch of fresh basil
  • 3.5 oz Viaggio grated parmesan
  • 5 oz ricotta cheese
  • Salt and pepper to taste

Instructions

  1. Start by washing the basil leaves under cold water. Dry them thoroughly with a cloth.
  2. In a blender, combine the Viaggio Italian peeled tomatoes, basil leaves, pine nuts, and the garlic clove (cut in half). Add the Viaggio grated parmesan and ricotta cheese to the blender as well.
  3. Season with salt and pepper to taste. Gradually pour in the Viaggio extra virgin olive oil while blending at low speed, adjusting the consistency to your liking.
  4. Once the pesto is smooth and creamy, it's ready to serve. Use it as a sauce for pasta, a dip, or however you prefer!
