SICILY - Pesto alla Siciliana

Ingredients
- 17 oz Viaggio Italian peeled tomatoes
- 2 oz pine nuts
- ¾ cup Viaggio extra virgin olive oil
- 1 clove garlic
- A bunch of fresh basil
- 3.5 oz Viaggio grated parmesan
- 5 oz ricotta cheese
- Salt and pepper to taste
Instructions
- Start by washing the basil leaves under cold water. Dry them thoroughly with a cloth.
- In a blender, combine the Viaggio Italian peeled tomatoes, basil leaves, pine nuts, and the garlic clove (cut in half). Add the Viaggio grated parmesan and ricotta cheese to the blender as well.
- Season with salt and pepper to taste. Gradually pour in the Viaggio extra virgin olive oil while blending at low speed, adjusting the consistency to your liking.
- Once the pesto is smooth and creamy, it's ready to serve. Use it as a sauce for pasta, a dip, or however you prefer!
