SARDINIA - Gnocchi alla Campidanese

Gnocchi with Sausage Sauce

Ingredients
- 1.1 lb Viaggio gnocchi
- 1 sausage (about 7 oz), casing removed
- 10 oz Viaggio Italian peeled tomatoes
- 1.7 oz onion, finely chopped
- Viaggio grated Romano cheese, to taste
- Viaggio extra virgin olive oil, to taste
- Salt, to taste
Instructions
- In a large pan, heat a drizzle of Viaggio Extra Virgin Olive Oil and sauté the chopped onion over low heat until soft. Add the sausage, breaking it up with a spoon, and cook on high heat for about 15 minutes until browned.
- Add the Viaggio Italian peeled tomatoes to the pan, stir to combine, cover with a lid, and simmer on low for about 1 hour. Season with salt as needed.
- Bring a large pot of salted water to a boil and cook the Viaggio gnocchi according to the package instructions. Reserve a ladle of pasta water before draining.
- In a bowl, combine the Viaggio grated Romano with a bit of hot pasta water. Blend until smooth, adding more water if needed to achieve a creamy consistency.
- Add the drained gnocchi to the sausage sauce, stir well, then mix in the cheese cream. Serve hot.
