LAZIO - Porcini al pomodoro

Sautéed Porcini Mushrooms with Cherry Tomatoes

Prep & Cook Time: 20 minutes

Servings: 4–6

Ingredients

  • 1 lb porcini mushrooms
  • ½ lb Viaggio cherry tomatoes
  • 2 garlic cloves
  • Fresh mint, to taste
  • ½ bunch fresh parsley
  • 4 tablespoons Viaggio extra virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Gently clean the porcini mushrooms by trimming the stems and wiping with a damp cloth. Slice into thin strips.
  2. In a large pan, heat the Viaggio extra virgin olive oil with the garlic cloves over medium heat.
  3. Once the garlic is fragrant and golden, add the sliced mushrooms. Sauté for about 2 minutes.
  4. Add the Viaggio cherry tomatoes, along with chopped mint and finely chopped parsley.
  5. Season with salt and black pepper to taste.
  6. Continue cooking for another 10 minutes, stirring occasionally.
  7. Serve hot as a side dish or topping for bruschetta or pasta.
