LAZIO - Porcini al pomodoro

Sautéed Porcini Mushrooms with Cherry Tomatoes

Ingredients
- 1 lb porcini mushrooms
- ½ lb Viaggio cherry tomatoes
- 2 garlic cloves
- Fresh mint, to taste
- ½ bunch fresh parsley
- 4 tablespoons Viaggio extra virgin olive oil
- Salt and black pepper, to taste
Instructions
- Gently clean the porcini mushrooms by trimming the stems and wiping with a damp cloth. Slice into thin strips.
- In a large pan, heat the Viaggio extra virgin olive oil with the garlic cloves over medium heat.
- Once the garlic is fragrant and golden, add the sliced mushrooms. Sauté for about 2 minutes.
- Add the Viaggio cherry tomatoes, along with chopped mint and finely chopped parsley.
- Season with salt and black pepper to taste.
- Continue cooking for another 10 minutes, stirring occasionally.
- Serve hot as a side dish or topping for bruschetta or pasta.
