ABRUZZO - Eggs with Tomato Sauce and Peppers

INGREDIENTS
2.2lb Viaggio Italian Peeled Tomatoes
1.1lb Viaggio Red Roasted Peppers
2 cloves of garlic
1 tablespoon of chopped fresh basil leaves
3 ½ tablespoons Viaggio Extra Virgin Olive Oil
Viaggio Grated Parmesan
Salt and pepper to taste
4 eggs
Croutons as desired
DIRECTIONS
In a pan large enough, heat the Viaggio Extra Virgin Olive Oil with the garlic. After having removed the garlic, add the Viaggio Italian Peeled Tomatoes. Season with salt and pepper and cook for 15 minutes, till reaching the desired density. Add Viaggio Roasted Red Peppers and continue cooking for few minutes, then add the chopped basil leaves. When ready to serve, break the eggs into the sauce ready, one at a time, cover the pot with the lid. Cook until the egg white will have curdled (2 minutes). Complete with Viaggio Grated Parmesan and freshly ground pepper to taste. Serve with toasted bread croutons.
