ABRUZZO - Eggs with Tomato Sauce and Peppers

Ingredients

  • 2.2 lb Viaggio Italian Peeled Tomatoes
  • 1.1 lb Viaggio Red Roasted Peppers, sliced
  • 2 cloves garlic
  • 1 tablespoon fresh basil, chopped
  • 3½ tablespoons Viaggio Extra Virgin Olive Oil
  • Viaggio Grated Parmesan Cheese, to taste
  • Salt and black pepper, to taste
  • 4 eggs
  • Croutons or toasted bread, for serving

Directions

  1. In a large pan, heat the olive oil over medium heat. Add the garlic cloves and sauté until golden, then remove and discard them.
  2. Add the Viaggio Peeled Tomatoes, season with salt and pepper, and cook for about 15 minutes, stirring occasionally, until the sauce thickens.
  3. Stir in the Viaggio Roasted Red Peppers and cook for a few more minutes. Add the chopped basil and mix well.
  4. Make small wells in the sauce and gently crack an egg into each. Cover the pan with a lid and cook for about 2 minutes, or until the egg whites are set but yolks remain soft.
  5. Sprinkle with Viaggio Grated Parmesan and freshly ground black pepper. Serve hot with croutons or toasted bread.
