ABRUZZO - Eggs with Tomato Sauce and Peppers

Ingredients
- 2.2 lb Viaggio Italian Peeled Tomatoes
- 1.1 lb Viaggio Red Roasted Peppers, sliced
- 2 cloves garlic
- 1 tablespoon fresh basil, chopped
- 3½ tablespoons Viaggio Extra Virgin Olive Oil
- Viaggio Grated Parmesan Cheese, to taste
- Salt and black pepper, to taste
- 4 eggs
- Croutons or toasted bread, for serving
Directions
- In a large pan, heat the olive oil over medium heat. Add the garlic cloves and sauté until golden, then remove and discard them.
- Add the Viaggio Peeled Tomatoes, season with salt and pepper, and cook for about 15 minutes, stirring occasionally, until the sauce thickens.
- Stir in the Viaggio Roasted Red Peppers and cook for a few more minutes. Add the chopped basil and mix well.
- Make small wells in the sauce and gently crack an egg into each. Cover the pan with a lid and cook for about 2 minutes, or until the egg whites are set but yolks remain soft.
- Sprinkle with Viaggio Grated Parmesan and freshly ground black pepper. Serve hot with croutons or toasted bread.
