INGREDIENTS
Peeled almonds 5oz
Viaggio flour 5oz
sugar 5oz
Butter 4 ½ oz
dark chocolate 5oz
vanilla extract to taste
salt 1 pinch
grated orange peel 1
DIRECTIONS
To prepare baci di dama, place the almonds into the mixer and mix with sugar. In a bowl add the butter cut into pieces, flour and almonds and begin to mix with your hands. Then add to the mixture the grated orange peel, vanilla essence, and a pinch of salt. Mix everything to obtain a homogeneous dough, wrap it in plastic wrap and let rest in refrigerator for at least an hour.
Once the dough will be ready, break it in different sticks, then cut small portions of dough (about 6-8 gr) that you will use to create small balls. Place the balls of dough on a baking tray, lined with paper. Put the dough balls in the refrigerator for at least 30 minutes. Then bake and cook in oven at 320F for about 20 minutes. Meanwhile, melt the chocolate in the microwave. When the biscuits are cooked, let them cool. Using a spoon, place the melted chocolate on the flat part of the cookie and cover it with another biscuit.
Put baci di dama on a tray and let the chocolate harden, then serve.
