PIEDMONT - Baci di dama

Baci di Dama (Lady’s Kisses)

Total Time: 1 hour (plus chilling time)

Yields: About 40 cookies

Preheat: 320°F

Ingredients

  • 5 oz peeled almonds
  • 5 oz Molino Signetti flour
  • 5 oz sugar
  • 4½ oz butter, cubed and softened
  • 5 oz dark chocolate
  • 1 tsp vanilla extract (or to taste)
  • 1 pinch salt
  • Grated zest of 1 orange

Instructions

  1. In a food processor, pulse the almonds with the sugar until finely ground. Transfer to a mixing bowl and add the flour, softened butter, orange zest, vanilla extract, and salt. Mix by hand until a smooth, even dough forms.
  2. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  3. Once chilled, roll the dough into thin logs and cut into small, equal portions (about 6–8 grams each). Roll each into a ball and place on a parchment-lined baking sheet, spacing them slightly apart. Refrigerate again for 30 minutes to help them keep their shape during baking.
  4. Preheat the oven to 320°F (160°C). Bake the cookies for about 20 minutes, or until just lightly golden. Remove from the oven and allow them to cool completely on a wire rack.
  5. Melt the dark chocolate in the microwave or over a double boiler. Once the cookies are cool, spoon a small amount of chocolate onto the flat side of one cookie and sandwich with another. Repeat with the remaining cookies.
  6. Let the chocolate harden at room temperature or place the cookies in the refrigerator briefly to set.
