Ingredients
- 5 oz peeled almonds
- 5 oz Molino Signetti flour
- 5 oz sugar
- 4½ oz butter, cubed and softened
- 5 oz dark chocolate
- 1 tsp vanilla extract (or to taste)
- 1 pinch salt
- Grated zest of 1 orange
Instructions
- In a food processor, pulse the almonds with the sugar until finely ground. Transfer to a mixing bowl and add the flour, softened butter, orange zest, vanilla extract, and salt. Mix by hand until a smooth, even dough forms.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
- Once chilled, roll the dough into thin logs and cut into small, equal portions (about 6–8 grams each). Roll each into a ball and place on a parchment-lined baking sheet, spacing them slightly apart. Refrigerate again for 30 minutes to help them keep their shape during baking.
- Preheat the oven to 320°F (160°C). Bake the cookies for about 20 minutes, or until just lightly golden. Remove from the oven and allow them to cool completely on a wire rack.
- Melt the dark chocolate in the microwave or over a double boiler. Once the cookies are cool, spoon a small amount of chocolate onto the flat side of one cookie and sandwich with another. Repeat with the remaining cookies.
- Let the chocolate harden at room temperature or place the cookies in the refrigerator briefly to set.
