Ingredients
- 1.1 lb Molino Signetti flour (about 4 cups)
- 6 eggs
- 5 oz sugar (about ⅔ cup), plus more for dusting
- 1 teaspoon vanilla extract
- Grated peel of 1 lemon
- 1 pinch of salt
- 1 ½ oz butter (about 3 tablespoons), melted
- 1 tablespoon baking powder
- Vegetable oil, for frying
Instructions
- In a large bowl, beat the eggs with the sugar until light and fluffy. Add the salt, vanilla extract, melted butter, baking powder, and grated lemon peel. Gradually mix in the flour until a smooth, soft dough forms.
- With lightly floured hands, form the dough into small balls. Heat oil in a deep pan over medium heat. Fry the dough balls in batches until golden brown on all sides.
- Remove with a slotted spoon and drain on paper towels. While still warm, sprinkle generously with sugar.
