TUSCANY - Maremmana peppers

Sweet Pepper & Tomato Sauté

Prep & Cook Time: 20 minutes

Servings: 4

Ingredients:

  • 4 Viaggio red roasted peppers
  • 3 onions, sliced
  • 6 tomatoes, peeled and sliced
  • 3 tablespoons Viaggio extra-virgin olive oil
  • 1 garlic clove, peeled
  • 1 oz capers, rinsed and chopped
  • 4 anchovy fillets, finely chopped
  • 1 oz fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

  1. Peel and remove seeds from the roasted peppers, then cut into strips.
  2. In a saucepan, heat the olive oil and sauté the sliced onions until golden. Add a splash of water to help soften them.
  3. Add the pepper strips and cook for about 10 minutes.
  4. Stir in the sliced tomatoes, whole garlic clove, salt, and pepper. Continue cooking, stirring occasionally, until the mixture becomes soft and creamy.
  5. Remove from heat, discard the garlic, and let the mixture cool slightly.
  6. Stir in the chopped capers, anchovies, and parsley. Mix well and serve at room temperature.
