TUSCANY - Maremmana peppers

Sweet Pepper & Tomato Sauté

Ingredients:
- 4 Viaggio red roasted peppers
- 3 onions, sliced
- 6 tomatoes, peeled and sliced
- 3 tablespoons Viaggio extra-virgin olive oil
- 1 garlic clove, peeled
- 1 oz capers, rinsed and chopped
- 4 anchovy fillets, finely chopped
- 1 oz fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Peel and remove seeds from the roasted peppers, then cut into strips.
- In a saucepan, heat the olive oil and sauté the sliced onions until golden. Add a splash of water to help soften them.
- Add the pepper strips and cook for about 10 minutes.
- Stir in the sliced tomatoes, whole garlic clove, salt, and pepper. Continue cooking, stirring occasionally, until the mixture becomes soft and creamy.
- Remove from heat, discard the garlic, and let the mixture cool slightly.
- Stir in the chopped capers, anchovies, and parsley. Mix well and serve at room temperature.
