Roasted Peppers with Almonds and Mint

Ingredients
- 4 Viaggio red roasted peppers
- 10 fresh mint leaves
- 4 tablespoons Viaggio extra virgin olive oil
- 2 cloves garlic
- 1.5 oz breadcrumbs
- 1.5 oz almonds
- 2 tablespoons white wine vinegar
- Salt, to taste
Instructions
- Start by washing and draining the Viaggio red roasted peppers. Remove the seeds and inner filaments, then slice the peppers into strips.
- In a large pan, heat the Viaggio extra virgin olive oil. Add the pepper strips and cook them, stirring occasionally, until they are lightly browned.
- Once the peppers are browned, add the chopped mint leaves, crushed garlic, almonds, breadcrumbs, and white wine vinegar. Season with salt to taste. Stir everything together and cook for another few minutes to allow the flavors to combine.
- Transfer the cooked peppers to a serving dish. You can serve them warm or at room temperature, making them a perfect side dish or appetizer.
