APULIA - Peppers with breadcrumbs

Ingredients

  • 4 Viaggio red roasted peppers
  • Stale bread, as needed (for breadcrumbs)
  • Viaggio Extra Virgin Olive Oil, to taste
  • 1½ oz Viaggio grated Romano cheese
  • 1 tablespoon capers
  • 1 garlic clove
  • Oregano, to taste

Instructions

  1. Drain the Viaggio red roasted peppers, pat them dry, and slice them into strips.
  2. In a pan, heat 2 tablespoons of Viaggio Extra Virgin Olive Oil over medium heat. Add the sliced peppers and cook for 5–10 minutes.
  3. Chop the stale bread into fine crumbs. In a bowl, combine the breadcrumbs with the grated Romano cheese, capers, minced garlic, and oregano. Mix thoroughly.
  4. Add the breadcrumb mixture to the peppers in the pan. Stir well to coat, then cover with a lid and cook for another 10 minutes over medium heat.
  5. Let the dish cool slightly before serving. Enjoy as a flavorful side or appetizer—these peppers are also delicious served cold.
