APULIA - Peppers with breadcrumbs

Ingredients
- 4 Viaggio red roasted peppers
- Stale bread, as needed (for breadcrumbs)
- Viaggio Extra Virgin Olive Oil, to taste
- 1½ oz Viaggio grated Romano cheese
- 1 tablespoon capers
- 1 garlic clove
- Oregano, to taste
Instructions
- Drain the Viaggio red roasted peppers, pat them dry, and slice them into strips.
- In a pan, heat 2 tablespoons of Viaggio Extra Virgin Olive Oil over medium heat. Add the sliced peppers and cook for 5–10 minutes.
- Chop the stale bread into fine crumbs. In a bowl, combine the breadcrumbs with the grated Romano cheese, capers, minced garlic, and oregano. Mix thoroughly.
- Add the breadcrumb mixture to the peppers in the pan. Stir well to coat, then cover with a lid and cook for another 10 minutes over medium heat.
- Let the dish cool slightly before serving. Enjoy as a flavorful side or appetizer—these peppers are also delicious served cold.
