Red Pepper Tuna Rolls

Ingredients
- 3 Viaggio red roasted peppers, drained
- 8.5 oz tuna in oil, drained
- 5 anchovy fillets
- 3 tablespoons capers in salt, rinsed and drained
- 1 tablespoon Viaggio extra virgin olive oil
Instructions
- Slice the drained roasted peppers into wide strips suitable for rolling.
- In a small bowl, combine the tuna, anchovy fillets, and desalted capers. Add the Viaggio extra virgin olive oil. Blend the mixture with an immersion blender until smooth and creamy.
- Spread a spoonful of the tuna mixture onto each pepper strip. Gently roll each strip to form small rolls.
- Arrange the pepper rolls on a serving plate. Serve immediately or chill briefly before serving for a refreshing appetizer.
