MOLISE - U' funnateglie

Sausage and Eggs with Peppers and Tomatoes

Ingredients

  • 4 eggs
  • 1 tbsp butter
  • 4 sausages, sliced
  • 2 Viaggio red roasted peppers, sliced
  • 6 ripe tomatoes, sliced
  • 1 onion, thinly sliced
  • 1–2 chili peppers (to taste)
  • Fresh basil, to taste
  • Salt, to taste
  • Viaggio extra virgin olive oil, as needed

Instructions

  1. In a large skillet, heat a generous drizzle of Viaggio extra virgin olive oil. Add the sliced onion and chili peppers and sauté until softened and fragrant.
  2. In a separate pan, melt the butter and brown the sliced sausage. Once cooked through and nicely browned, transfer it to the skillet with the onions and chili.
  3. Add the sliced tomatoes and red roasted peppers to the skillet. Season with salt and let everything simmer together over medium-low heat for about 45 minutes, until the vegetables are soft and the flavors have melded.
  4. Once the mixture is well-cooked and saucy, carefully crack the eggs over the top, making sure not to break the yolks. Cover the pan and cook just until the egg whites are set but yolks remain runny, about 3–5 minutes.
  5. Remove from heat, sprinkle with fresh basil, and serve warm—perfect with crusty bread for dipping.
