INGREDIENTS
2.2lb veal fillet
4 Viaggio red roasted peppers
2 carrots
1 ½ oz green olives
Rosemary and sage to taste
1 onion
White wine to taste
Viaggio Extra Virgin Olive Oil to taste
Butter to taste
Salt to taste
DIRECTIONS
Cut the Viaggio red roasted peppers and carrots into pieces. Take the piece of meat and tie it with string, inserting under the string sage leaves and some rosemary, then massage all its surface with salt. Put him in a buttered baking tray. Pour in some Viaggio Extra Virgin Olive Oil and place it at 480°F for 10 minutes. Add a ladle of boiling water and a cup of wine. Continue to cook the roast for 45 minutes at a temperature of 300°F.
In the meantime, brown the sliced onion in a saucepan with Viaggio Extra Virgin Olive Oil and a glass of water. Add the peppers, carrots and olives. Cook the mixture and season with salt. Remove the roast from the oven and slice it. Add the vegetables. Serve it hot.
