Roasted Pepper & Cream Cheese Bruschetta

Ingredients
- 2.2 lb rustic bread (such as Italian or sourdough)
- 3 Viaggio red roasted peppers
- Cream cheese, to taste
- 1–2 garlic cloves, finely chopped
- Fresh basil leaves, chopped
- Viaggio extra virgin olive oil, to taste
- Salt and ground black pepper, to taste
Instructions
- Slice the roasted red peppers into thin strips and place them in a bowl. Add chopped garlic and basil. Drizzle with olive oil, season with salt and black pepper, and toss to combine.
- Slice the bread into thin pieces. Grill the slices on a barbecue or toast them in a hot oven until golden and crisp on both sides.
- Arrange the toasted bread on a serving platter. Spread each slice with a thin layer of cream cheese (optional), then top with the marinated pepper mixture.
- Drizzle with a little more olive oil if desired and serve immediately.
