EMILIA ROMAGNA - Pepper sauce - Pavrunäda

Ingredients

  • 4 Viaggio Red Roasted Peppers, drained and chopped
  • 2 medium onions, thinly sliced
  • 4 Viaggio Italian Peeled Tomatoes, roughly chopped
  • 1 tablespoon chopped fresh parsley
  • A few fresh basil leaves
  • 1 cup water
  • Salt, to taste
  • Viaggio Extra Virgin Olive Oil, to taste (about 5 tablespoons)

Instructions

  1. In a large pan, heat 5 tablespoons of Viaggio Extra Virgin Olive Oil over medium heat. Add the sliced onions and sauté until they are soft and golden, about 10–12 minutes.
  2. Stir in the chopped roasted peppers, peeled tomatoes, parsley, and basil. Pour in 1 cup of water and season with salt to taste.
  3. Reduce heat to low and simmer uncovered, stirring occasionally, until the water has completely evaporated and the mixture is thick and flavorful—about 15–20 minutes.
  4. Let the sauce cool to room temperature. Spread over slices of toasted homemade bread and serve as an appetizer or side.

Serving Tip:

This spread is delicious served cold or at room temperature, and pairs wonderfully with crusty bread, cheese boards, or grilled meats.
