Ingredients
- 4 Viaggio Red Roasted Peppers, drained and chopped
- 2 medium onions, thinly sliced
- 4 Viaggio Italian Peeled Tomatoes, roughly chopped
- 1 tablespoon chopped fresh parsley
- A few fresh basil leaves
- 1 cup water
- Salt, to taste
- Viaggio Extra Virgin Olive Oil, to taste (about 5 tablespoons)
Instructions
- In a large pan, heat 5 tablespoons of Viaggio Extra Virgin Olive Oil over medium heat. Add the sliced onions and sauté until they are soft and golden, about 10–12 minutes.
- Stir in the chopped roasted peppers, peeled tomatoes, parsley, and basil. Pour in 1 cup of water and season with salt to taste.
- Reduce heat to low and simmer uncovered, stirring occasionally, until the water has completely evaporated and the mixture is thick and flavorful—about 15–20 minutes.
- Let the sauce cool to room temperature. Spread over slices of toasted homemade bread and serve as an appetizer or side.
Serving Tip:
This spread is delicious served cold or at room temperature, and pairs wonderfully with crusty bread, cheese boards, or grilled meats.
