EMILIA ROMAGNA - Pepper sauce - Pavrunäda

INGREDIENTS
4 Viaggio red roasted peppers
2 onions (medium size)
4 Italian peeled tomatoes
1 tbsp of chopped parsley
1 cup of water
Some basil leaves
salt to taste
Viaggio Extra Virgin Olive Oil to taste
DIRECTIONS
Drain the peppers and cut them into pieces that are not too small. In the meantime, sauté in a pan the onions, cut into thin slices, with 5 tbsp of Viaggio Extra Virgin Olive Oil, until they are well golden. Add the chopped peppers, the Viaggio Italian peeled tomatoes, the basil, the parsley and the cup of water, adjusting the salt. Let it cook very slowly until all the water is evaporated. The sauce is served cold, spread on slices of homemade bread, preferably slightly toasted.
