CAMPANIA - Peppers and mozzarella pie

Carasau Bread Pie with Roasted Peppers & Buffalo Mozzarella

Ingredients

  • 2 sheets of Carasau bread
  • 4 Viaggio red roasted peppers
  • 0.88 lb buffalo mozzarella, thinly sliced
  • 4 green olives, chopped
  • 4 black olives, chopped
  • 2 tbsp Viaggio Extra Virgin Olive Oil
  • 1 clove garlic, thinly sliced
  • 1 small handful fresh rosemary, chopped
  • Salt, to taste

Instructions

Prepare the Filling

  1. Slice the buffalo mozzarella and let it drain in a colander.
  2. Slice the roasted peppers into strips. In a bowl, mix the peppers with rosemary, garlic, olive oil, and salt.
  3. Chop the green and black olives and set aside.

Assemble the Pie

  1. Place one sheet of Carasau bread on a large square of aluminum foil on a baking tray. Drizzle lightly with olive oil and a pinch of salt.
  2. Layer with half the mozzarella, roasted peppers, and chopped olives. Top with the second Carasau sheet, then layer with the remaining filling and finish with a final sheet of bread.
  3. Cover the pie with foil and bake in a preheated oven at 390°F (200°C) for about 15 minutes, until heated through and slightly crisp.

Serve

Remove from the oven, slice, and serve warm.
