Ingredients
- 2 sheets of Carasau bread
- 4 Viaggio red roasted peppers
- 0.88 lb buffalo mozzarella, thinly sliced
- 4 green olives, chopped
- 4 black olives, chopped
- 2 tbsp Viaggio Extra Virgin Olive Oil
- 1 clove garlic, thinly sliced
- 1 small handful fresh rosemary, chopped
- Salt, to taste
Instructions
Prepare the Filling
- Slice the buffalo mozzarella and let it drain in a colander.
- Slice the roasted peppers into strips. In a bowl, mix the peppers with rosemary, garlic, olive oil, and salt.
- Chop the green and black olives and set aside.
Assemble the Pie
- Place one sheet of Carasau bread on a large square of aluminum foil on a baking tray. Drizzle lightly with olive oil and a pinch of salt.
- Layer with half the mozzarella, roasted peppers, and chopped olives. Top with the second Carasau sheet, then layer with the remaining filling and finish with a final sheet of bread.
- Cover the pie with foil and bake in a preheated oven at 390°F (200°C) for about 15 minutes, until heated through and slightly crisp.
Serve
Remove from the oven, slice, and serve warm.
