ABRUZZO - Chicken breast with peppers

Ingredients
- 1.3 lb chicken breast, sliced
- 1.3 lb Viaggio red roasted peppers, sliced into strips
- 0.88 lb Viaggio cherry tomatoes
- Molino Signetti 00 flour, for dredging
- 1.4 oz butter
- 1 onion, finely chopped
- 1 ladle hot water (or broth)
- Viaggio Extra Virgin Olive Oil, to taste
- ½ cup white wine
- Salt and black pepper, to taste
Instructions
- Heat a drizzle of Viaggio Extra Virgin Olive Oil in a large saucepan over medium heat.
- Add the finely chopped onion and sauté for 1 minute.
- Pour in a ladle of hot water or broth and simmer for 3 more minutes until the onion softens.
- Add the cherry tomatoes, roasted pepper strips, salt, and black pepper.
- Cover and cook over medium heat for 25 minutes, stirring occasionally.
- While the sauce simmers, melt the butter in a separate pan over low heat.
- Lightly dredge the sliced chicken breasts in Molino Signetti 00 flour.
- When the butter begins to sizzle, add the chicken slices and cook over medium heat until lightly browned on both sides.
- Pour in the white wine and cook until it has evaporated, about 2–3 minutes.
- Once the pepper-tomato sauce is ready, add the browned chicken slices to the sauce.
- Cover and cook together for 5 minutes over medium heat.
- Remove the lid and continue cooking for another 5 minutes on low heat to let the flavors meld.
Serving Tip:
Serve hot with crusty bread or over rice or polenta to soak up the flavorful sauce.
