AOSTA VALLEY - Risotto carciofi e stracchino

Rice with Artichokes and Stracchino Cheese

Ingredients

  • 10 oz rice
  • 2 Viaggio artichokes
  • 5 oz Stracchino cheese
  • ½ cup whole milk
  • 4 cups vegetable broth
  • 1 onion
  • Salt and pepper to taste
  • Peel of 1 lemon
  • 3 bunches thyme

Instructions

  1. Begin by heating the vegetable broth in a pot. Peel and slice the onion thinly, then drain and slice the artichokes.
  2. In a separate pan, sauté the sliced onion in a drizzle of oil for a few minutes until softened. Add the rice and stir to coat.
  3. Add a ladle of hot broth to the rice, cooking over low heat and stirring occasionally. Continue adding more broth as needed and cook for about 20 minutes.
  4. While the rice cooks, chop the thyme and add it along with the lemon peel. Stir in the Viaggio artichokes and cook for another 10 minutes. Season with salt and pepper to taste.
  5. In a blender, combine the Stracchino cheese and milk, then blend until smooth.
  6. Once the rice is cooked, stir in the cheese cream and mix well. Serve immediately for a creamy, flavorful dish.
