UMBRIA - Tagliatelle artichokes and bacon

Tagliatelle with Artichokes and Bacon

Ingredients

  • 9 oz tagliatelle
  • 4 Viaggio artichokes, drained and chopped
  • 1 oz Viaggio extra-virgin olive oil
  • 5 oz bacon, chopped
  • 3 oz red onion, chopped
  • ¼ cup white wine
  • 3 bunches fresh thyme
  • Salt and pepper, to taste

Instructions

  1. Drain and wash the Viaggio artichokes, then chop them into pieces.
  2. In a large pan, heat the Viaggio extra-virgin olive oil over medium heat. Add the chopped onion and cook until softened.
  3. Add the chopped artichokes, season with salt and pepper, and pour in the white wine. Cook on high heat for 5 minutes, stirring occasionally.
  4. Meanwhile, cook the bacon in another pan until crispy, then add it to the artichokes and mix well.
  5. In a pot of boiling salted water, cook the tagliatelle according to the package instructions. Drain and add the pasta to the pan with the artichoke and bacon mixture.
  6. Toss to combine, then sprinkle with fresh thyme. Serve immediately.
