UMBRIA - Tagliatelle artichokes and bacon

INGREDIENTS
Tagliatelle 9oz
4 Viaggio artichokes
Viaggio Extra Virgin Olive Oil 1oz
Bacon 5oz
Red onion 3oz
¼ cup white wine
3 bunches thyme
Salt and pepper to taste
DIRECTIONS
Drain and wash Viaggio artichokes, chop them. In a large pan pour Viaggio Extra Virgin Olive Oil and add chopped onion. Add Viaggio artichokes, salt and pepper to taste and the white wine and cook for 5 minutes on high heat. In another pan, let the bacon brown, and when it is ready, add it to the artichokes and mix well. In a pot with boiling water cook tagliatelle, drain them and pour them into the pan with the artichoke mixture. Add some thyme on top and serve
