UMBRIA - Tagliatelle artichokes and bacon

Ingredients
- 9 oz tagliatelle
- 4 Viaggio artichokes, drained and chopped
- 1 oz Viaggio extra-virgin olive oil
- 5 oz bacon, chopped
- 3 oz red onion, chopped
- ¼ cup white wine
- 3 bunches fresh thyme
- Salt and pepper, to taste
Instructions
- Drain and wash the Viaggio artichokes, then chop them into pieces.
- In a large pan, heat the Viaggio extra-virgin olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the chopped artichokes, season with salt and pepper, and pour in the white wine. Cook on high heat for 5 minutes, stirring occasionally.
- Meanwhile, cook the bacon in another pan until crispy, then add it to the artichokes and mix well.
- In a pot of boiling salted water, cook the tagliatelle according to the package instructions. Drain and add the pasta to the pan with the artichoke and bacon mixture.
- Toss to combine, then sprinkle with fresh thyme. Serve immediately.
