TUSCANY - Tuscany artichokes

Marinated Artichoke Salad

Ingredients:

  • 6 Viaggio artichokes (drained)
  • Viaggio extra-virgin olive oil, to taste
  • Fresh parsley, chopped
  • Salt, to taste

Instructions:

  1. Drain the Viaggio artichokes and cut them in half using a sharp knife.
  2. Arrange the artichokes on a serving dish.
  3. Drizzle with Viaggio extra-virgin olive oil, sprinkle with chopped parsley, and salt to taste.
  4. Serve cold.
