Ingredients
- 0.88 lb Viaggio penne
- 4 Viaggio artichokes
- 3 ½ oz bacon, diced
- 1 clove garlic, finely chopped
- Oregano, to taste
- Dry white wine, to taste
- Salt and pepper, to taste
- Viaggio grated Parmesan, for serving
- Viaggio extra virgin olive oil, for cooking
Instructions
- Clean and cut the artichokes into small pieces. In a large pan, sauté the diced bacon in 1 tablespoon of Viaggio extra virgin olive oil over moderate-high heat until it starts to crisp up. Add a splash of dry white wine and let it evaporate. Then, add the finely chopped garlic and sauté for another minute.
- Add the artichokes to the pan with the bacon and garlic. Season with salt, pepper, and oregano. Pour in about ½ cup of water and cook for 10 minutes, allowing the artichokes to soften and the flavors to meld.
- While the sauce is cooking, bring a pot of salted water to a boil. Cook the Viaggio penne according to the package instructions. Once done, drain the pasta, reserving a bit of pasta water.
- Add the cooked penne to the pan with the artichoke and bacon sauce. Toss everything together, adding a little reserved pasta water if needed to help coat the pasta. Sauté for another couple of minutes, allowing the flavors to combine.
- Remove from the heat and sprinkle with Viaggio grated Parmesan. Serve hot and enjoy!
