BASILICATA - Ciaudedda lucana
12 ½ oz of fresh, clean double peel broad beans
4 small potatoes
4 Viaggio artichokes
1 large onion
3 ½ oz bacon
Viaggio extra virgin olive oil to taste
salt to taste
Remove the beans from the double peel and wash them under the cold water.
Cut the artichokes in cloves. Wash, peel and dice potatoes. Peel and slice the onion.
In a large pan, sauté on high heat the sliced onion with bacon and Viaggio extra virgin olive oil. Once the onion has softened, add the beans, artichokes and potatoes. Mix and add a couple of ladles of lukewarm water and cook for about 30 minutes on low heat (if necessary add a little more water during cooking).
Once the vegetables have softened, let them rest for few minutes.
