SICILY - Pesto alla Siciliana

INGREDIENTS

  • 17oz Viaggio Italian peeled tomatoes
  • 2oz Pine nuts
  • 3/4 cup Viaggio Extra Virgin Olive oil
  • 1 clove of garlic - peeled and cut in half
  • 1 bunch of Basil
  • 3.5oz Viaggio grated parmesan
  • 5oz Ricotta cheese
  • Salt and pepper to taste

 

DIRECTIONS

  1. Wash the basil leaves under running water, drain them, dry them with a cloth
  2. Pour the Viaggio Italian peeled tomatoes in a blender, add the washed and dried basil leaves and pine nuts
  3. Add into the blender: the clove of garlic, Viaggio grated parmesan and ricotta. Salt and pepper to taste
  4. After all ingredients are added, pour in the Viaggio extra virgin olive oil and run the mixer at low speed to control the creaminess.
