SARDINIA - Malloreddus alla campidanese

Viaggio grated romano to taste
Viaggio extra virgin olive oil to taste

To prepare the malloreddus alla campidanese, start by preparing the sauce. Peel and finely chop the onion, then let it dry slowly in a pan, together with the Viaggio extra virgin olive oil. Meanwhile, peel the sausage. Chop it coarsely by hand and add to the sauté onion. Brown the sausage for 15 minutes on high heat, stirring frequently and then add the Viaggio Italian peeled tomatoes. Mix again and cover the pan with a lid, and cook for about an hour. Finally, if necessary, adjust the salt. When the sauce is ready, cook the Viaggio Gnocchi in a pot plenty of boiling water. Meanwhile, grate the cheese in a bowl and add a ladle of pasta cooking water. Then put it in a blender adding more water if necessary till obtaining a smooth cream. Drain the Viaggio gnocchi and add them to sausage sauce directly in the pan, stir and finally add the cream cheese. Stir well to mix all the ingredients and serve malloreddus alla campidanese still hot!
