TUSCANY - Maremmana peppers

INGREDIENTS

Viaggio red roasted peppers 4

3 onions

6 tomatoes

Viaggio extra virgin olive oil 3 tablespoons

1 clove of garlic

Capers 1oz

4 anchovy fillets

Parsley 1oz

Salt and pepper to taste

 

DIRECTIONS

Peel, remove the seeds and cut them into strips. Peel, slice the onions and leave it to dry in a saucepan with oil, till it gets brown. Pour a few tablespoons of water and add the peppers. After 10 minutes add the sliced tomatoes, peeled and crushed garlic clove, a pinch of salt and pepper. Cook, stirring occasionally, until the vegetables become creamy and homogeneous. Let cool and remove the garlic. Finely chop the capers, drained anchovies and parsley, washed, add peppers, stir and serve.
